Healthy Quick and Easy Hummus Recipe

Summer is coming which means you want to spend less time in the kitchen and more time out in the sun eating. So I have this quick and easy hummus recipe for you, perfect to take on all those summer picnics and impress your friends.

Hummus is so easy to make and once you know how you will never go back to shop bought!

-800g of tinned chickpeas usually two cans (leave some aside for garnish)
-8 tbsp of extra virgin olive oil
-Juice from half a lemon
-2 tbsp of tahini
-2-3 cloves of garlic (if his is your first time making hummus try 2 first, the garlic is raw and comes out stronger than shop bought)
-Salt and pepper to taste
-Spring onion or coriander to garnish (optional)

Simply blend all your ingredients together and you are done! The hummus will keep in the fridge for 3-4 days.

This is a great basic hummus recipe as it can be easily adapted for different flavours by adding roasted garlic, coriander, red pepper, caramelised onions, paprika or chilli. Just experiment with it and have fun.

I absolutely adore hummus it’s packed full of protein and has great versatility, it’s great in sandwiches, on toast, as a dip or used in meals. I recently baked the hummus from this recipe on aubergine and it was delicious! See the photo below:

Serving suggestion - Hummus baked on aubergine with a balsamic carrot and cucumber salad.
