Creamy Vegan Broccoli and Leek Soup

This is a great healthy and fresh tasting soup it is 100% vegan and uses no processed foods but still has a creamy texture and is extremely filling. This soup is packed full of vitamins and minerals especially plenty of vitamin E which is great if you’re having a bad skin breakout.
The best thing about this recipe is that its supper easy and quick to make.

  • 1 medium broccoli
  • 2 medium sized leeks
  • 2 medium sized avocados
  • 2 medium sized onions
  • 4 cloves of garlic
  • Vegan stock of choice
  • Salt and pepper to taste
  • Coriander/Parsley for garnish

Equipment needed:
  • Chopping board
  • Sharp knife
  • Deep set pan
  • Blender

Before you start any cooking make sure you wash the veggies. This is a very important step that many overlook. Especially when using leeks as they often have grit in them which hurts your teeth when later eating.

A tip to wash the leeks is to peel back the top bits so you can get in between the layers, generally the grit is only at the top of the leek and not towards the bottom.

Dice all the veggies into even chunks, the smaller you cut them the faster they will cook. Then simply place them into a pan, pour in your selected stock and leave to simmer for 15-20 minutes, do not boil! This takes away from the delicate flavour of the vegetables.  

Once everything is cooked take off the heat. Open and slice the avocados and put into the soup and blend everything together. Then season to your taste. 

Garnish with some coriander or parsley and enjoy!

Remember this is a very rich tasting soup so don’t overdo the portion sizing, a little goes a long way.
